About Hatched

Hatched is a fast-casual breakfast and brunch spot at Town & Country Village, the shopping center on El Camino Real across from Stanford. It officially opened on January 6, 2026, according to Palo Alto Online, as reported by Hoodline. The restaurant describes itself as egg-forward: the menu is built to start your morning "protein-strong" with egg sandwiches, avocado toasts and salads.

Hatched comes from three brothers. Hoodline, citing Palo Alto Online, says Brandon Poon is the eldest and head chef, Clifton Poon is the CFO and Craighton Poon oversees expansion and construction. The brothers already run Roost & Roast a few doors away in the same center. Hatched is part of their Kurated Kitchens Restaurant Group, which also runs a food hall in Sunnyvale where the brothers test new concepts. A second Hatched counter operates inside that food hall.

The menu is short and focused. It covers toasts, sandwiches, wraps, salads, tater tots and drinks.

Toasts

Toasts are served on freshly baked bread. The Classic Avocado Toast comes with everything bagel seasoning and chili flakes. The ATA adds arugula, grape tomatoes and Parmesan, while the Sunnyside tops smashed avocado with a sunny-side-up egg. There is also a creamy scramble toast and a mushroom toast with a crimini and shiitake blend.

Sandwiches and wraps

Egg sandwiches on a fresh bun are the core of the menu. The BFF pairs scrambled eggs, cheddar, caramelized onions and arugula with garlic aioli. The B.E.C. adds bacon and chipotle ketchup. The Ono is a crispy fried chicken thigh with an over-medium egg and sriracha aioli. Piggie Smalls uses slow-roasted pork belly. Meatless choices include the Holy Shiitake and the Green Dream with avocado. Burgers such as the Jalapeño Smash, the OG Burger and a breakfast burger round things out. Wraps include a breakfast burrito with tater tots and a crispy chicken Caesar wrap.

Salads, sides and drinks

Salads include an arugula Parmesan salad, a miso Caesar, an avocado chop and a Fuji apple salad. Tater tots come plain or with Parmesan and garlic. The drink bar is a full espresso and matcha bar that uses locally roasted coffee beans and Japanese matcha. Matcha drinks include a classic matcha latte, a dirty matcha with espresso and a coconut ube matcha latte.

Menus change, so check the restaurant's website for the current list. The Hoodline report also mentioned specialty drinks such as a black sesame latte at opening, which shows the drink list rotates.

Ordering and catering

You order at the counter or online for pickup or delivery through the "Order Now" link on the website. Catering is handled through a shared Kurated Kitchens platform, where you choose the restaurant and pickup or delivery. Options include party trays and individually boxed meals with labels that list each item's dietary markers and allergens. Pickup catering has no minimum, while delivery catering has a minimum order. The catering team can be reached by phone, text or email, as listed on the catering page.

Who it suits

Hatched fits an early breakfast before work, a quick weekend brunch or a coffee and matcha stop while shopping. It opens at 7 a.m. every day, which helps on school and work mornings. It is counter service, so it works better for a casual meal than a long, leisurely brunch. Vegetarians have several egg and mushroom choices, but much of the menu features bacon, pork belly, fried chicken or beef.
